Printing 5x7" questions

I have a request for several hundred 5x7" prints.
The 8x10's will be printed on 8.5x11"epson luster.
I am having an issue with how to print and present the 5x7's.
The luster paper is not available in 5x7.
If I print 2 5x7's on the 8.5x11" paper- the margins are not equal.
I do have a paper cutter and do not mind cutting the larger paper in half, but I am not going to trim all the sides perfectly on hundreds of 5x7's.
I am likely missing something here- is there an easy way to do this?

If you're aiming for quarter inch borders, You can do it with one cut per 5"x7" print. Print 2 per 8.5"x11" sheets, with the pair of images offset to the left. Then cut off the big margin on the right, and then cut in half.

There are a lot of 5x7 lustre papers out there.  Which one are you planning on using?  Does it *truly* matter if you use 1 specific paper? Lustre's are very similar.

Using a Rotatrim (or similar) it would only take about 10 minutes to cut down 150  8.5"x11" sheets to 300 5"x7" sheets. A trivial task.

True, I was hoping to print this weekend, local stores have nothing but glossy 5x7.
