In the Export dialogue box you've got the option to "watermark" your image. You can use this feature to add a copyright symbol. I use it to put an unobtrusive watermark of my website URL on every photo that goes up on the web.

If you mean the "©" symbol, hold down the Alt key and type 0169 and then release the Alt key and you get a ©

In PS you'll need to place this in a text layer.

On a Mac it's easier: press [OPT] + C.
Regarding the software, Lightroom is the way to go.

Did they change it? Used to be that Option-c gave you ç and Option-g gave you ©.

French keyboard layout maybe?

With my italian keyboard:
OPT + C = ©
OPT + G = ∞

Since you can use Shift/Shift+Opt/Opt on almost any key, you have a LARGE choice of symbols without having to remember codes.
