Title: Simple way to include metadata in a copyright ?!

Is there simple way to include metadata in a copyright ?!

For example © "Year of Capture" "My Name"

Also how to insert "Author Name" (or other metadata) in photos that don't contain Author (or other metadata) field ?!

You can set up a default metadata template for Library module/Metadata panel/Preset. You can make up any number of presets to suit your needs there.
This preset can be added on import in the 'Apply during import panel' on right side of import dialogue. Keywords can also be added whilst importing.
Or add whilst in Library module.
Some cameras, Canon for example allow you to get camera to add your name to copyright field in photos as they are taken.
