Are there any decent one shot panoramic lens' on the market for my canon 5d? I work a lot on the beaches and trying to capture crashing waves in a panorama is impossible when trying to take and merge several shots.
Any tips or ideas?

FWIW I don't believe that there is an option here.

Shoot wide, and then crop... You just have to find something wide enough for you, or even a fisheye.

You could do it in one capture if you had enough pixels so that it would tolerate cropping.
But you can use most any lens to capture moving water and stitch it together to make a pano. It’s a challenge to accommodate the motion but with some work you can get good results. I use a long exposure and typically make several series. Once I get to PP it’s not too much work to clean up the image. The following is 9 frames that are digitally stitched. I just printed this and even at 6’ in length it’s marvelous.

If you want really wide, I find my Sigma 12-24 works fairly well on my 5D Mark II. There's some distortion but it's corrected in post. I've shot several photos that I knew were going to be cropped to a panoramic.

I agree, Justan. Moving water or clouds, even people, are easily corrected after stitching.

2 or 3 camera bodies with same lenses fired at the same time...

One could set up a group of radio-controlled cameras, manual focus, manual exposure set, and get simultaneous shutter firing with the radio controller.
One could de-fish or de-barrel an ultrawide angle lens single shot.

I know you probably have your heart set on using your 5D, but if you truly have this creative vision or necessary project - hire a medium format for a day so you have enough pixels to play with.
