I feel really dumb asking this question, but I am definitely stuck and could use some help.
Let's say that I create a topic Collection from a Quick Collection. Then sometime later I want to add additional images to the Collection that I had created. How do I do it?
It's not addressed in Martin Evening's book on Lightroom 2, perhaps because it is so obvious. Except not to me.
Any suggestions would be appreciated.

Very simple.
Right click the collection you want to add photos to and "Set as target collection". When you place the cursor on a photo in grid view there will be a small circle in the upper right corner of the photo. Click on this circle and it will add the photo to the target collection. If it is already in the target collection it will remove the photo.
Also you can right click the photo and click on "Add to target collection".
Sounds complicated but in practice it becomes quite easy.

From memory, drag and drop works pretty well: select the shots in grid view and drag them to the name of the collection in the list on the left.

Jeremy,
Your memory is better than mine. You're correct, I had forgotten this.
