Title: canon ipf5000 vs epson 3800

which is better in terms of print quality. these are my 2 choices. i don't mean to start a web war.

It realy depends on what your needs are! I think that both printers are excelent and serve slightly different needs and purposes.

I don't think differences in image quality are likely to be the most important factor for these printers.  See the Wiki for comparison of pros and cons of each printer, assuming the 3800 probably has slightly better image quality than the 4800:

iPF5000 clearly (although subtly) over the older 4800. The bigger differences are the 5000s roll paper support (the best deals on the 5000 include a roll feeder) and improved ink switching versus the 3800s smaller size, profiles and better suport and documentation.
